Soviet documents are very untrust worthy. The Soviets were known to change documents to make themselves look better.
Just go for STG full auto videos on youtube. An argument could be made that 8mm kurz ammo is loaded a bit softer in those videos (dont want to damage a very cool piece of history) or that surplus ammo has gotten weak over the years, but in general 500 rpm for a STG is very likely its real RPM.

Well war propaganda exists on all sides for sure, but internal testings should be… well accurate since those documents aren’t really made for the public.

Doubting Soviet sources does not also mean believing that literally anything else is believable above it, more than one source of information can be faulty.
That being said, the Germans were generally very good record keepers, they were just also very good record destroyers as well (which is why we have the paradox of very good quality, but incomplete documentation). Anything discussing practical topics are likely to be not just very accurate, but also detailed and trustworthy (the Germans wanted to make informed descions after all, and military production is rarely subject to political censorship, they weren’t stupid enough to tell their generals that they had any more or less of [stuff] than they actually had).

Sorry but this is true, it’s part of how german engineers were able to convince command to agree to stuff like tiger 2 etc.
Should i remind you that germany spent A LOT of money on Ahnenerbe? German trial records are often embellishing and untrustworthy, soviet records are much more accurate because they weren’t seeking for wunderwaffen, they were actively interested in good, practical weapons and their true effectiveness.
It just so happened that soviet body armors are well described and were actually well recieved by troops.
