I personally hate Assault the most, but I get your drift. I have pretty much resigned myself into just playing my own personal custom matches. I don’t have to worry about the map, the game mode or crappy team mates.

In custom match, you can fixe the BR of the game ?
In custom match there is no BR rating, you might be against BR1 weapons or BR5, so you play whatever weapons you want. I actually make up some custom match squads that either use weapons I won’t use in the general match, or my favorite squads from every level. You can make the bots either standard or hardcore, and control how many bots are in the game. The more in the game the more difficult it is. So, you can tailor it to your liking.

I wana play against other players and bots in custom match, but I don’t want to fight against someone with full BR5 proto-AR-SF guns .

If you play in a custom match with other players, then you can get in against people with those proto weapons since everyone can choose whatever they want. If you play your own two player match against bots only, then they can still use proto weapons, but they are much more predictable in their movements, so the weapons are not as devastating.
I’d try a match or two and see how you like it. I absolutely hate using bolt action rifles, so my own custom matches are a great place to practice with them, and I am getting quite a bit better, even consistently defeating bots carrying MG-42’s.
