Because people keep complaining about Gray zone Camping tanks and you always need anti tank weapon but wouldn’t it be useful if you had a mortar unit in your squad as well so you can shoot right into the Gray zone to destroy those camping tanks.

Technically you can have both, just unlock the AT slot in your mortar squad at the cost of your assaulter.

True but it would be more useful in the AT squad instead of mortar squad
Regrettably the mortarman is a unique squad feature so you can’t seed them in other squads the way you can Assaulters, Engieers, ROs, Snipers, Medics and ATs.
They should do it then because it would probably deal with Gray zone Camping that everyone keeps complaining about and I ran out of hearts again
The antidote for grey zone are bombs or rockets - big ones too ! and of course a team that’s not intellectually challenged and can mark the offending vehicle when the plane is actually ready to make its attack run. 
Heavy mortar are actually capable of anti tank, however shell have long travel time though and light mortar doesn’t do anything
