why can an armoured jeep not be a APC
Because it can’t do the two core jobs of an APC at the same time:
carry multiple soldiers + protect them with armour
A jeep like the Willys MB is simply too:

Adding a sheet of metal to a jeep making it… ding ding ding - an armoured jeep still with the purpose of logsitics - troops, supplies etc but making it more protected
If you do the opposite to the tanks u mentioned - removing this armour, it is no longer a tank

A jumbo without appliqué armor is still a tank. The armor is an added sheet of metal. Same with super Pershing. Jeep is already a personnel carrier. With armor it becomes. Surprisingly. An armored personnel carrier.

This is just my take on things, but I see Enlisted as a remake of Heroes and Generals, and they had some good ideas—it would be cool to bring some of those elements back.
In any case, I hope they’ll add German uniforms in the next major update.
