Yeah, that could be decently effective. I actually do use the motorcycle squads in tunisa a fair bit, but its either for back capping, or for getting a rally point built in a good flanking spot much quicker than I could reach it on foot. They also work well against oblivious tanks, since you can drive up, get out, det pack them, then run off fairly quickly. Can do a similar thing by bringing an AT Gunner and hopping out a ways off to the side.
Personal favorite ground to air kill was the time I nailed a german fighter in the wing with an RMN-50. It was almost certainly going to crash anyway, since it was both very low and very slow, but watching the poor thing’s wing just fly off as it started to pinwheel was beautiful.
