I think the title says it all:
In JU-188 A-2 you can switch to machine gun by hitting 4 but not back to pilot by pressing 1.
There is no way to switch back to pilot.

that is the default key to change from pilot to gunner

Because 1 and 2 are binded to flaps by default iirc. You need to use Y
