Feel free to contribute, gonna update this as I find new issues with how weapons worked/what was available for them historically. It’s not going to start as an exhaustive list.
Moscow
M38 Carbine - Bayonet shouldn’t be compatible with this rifle
M1895 Winchester - Was issued with a bayonet, not present in game
Normandy
M1903 Springfield/M1 Garand - M1905 and M1 model bayonets (Springfield and Garand) are interchangeable, but not in game.
Colt New Service - should be, based on history and the in game data, chambered for .45ACP, requiring half-moon clips to load instead of loading singly, unless it’s not the M1917 Colt.
Gewher 41 - always reload two striper clips (10 rounds) regardless of how many rounds are in the gun.
Johnson 1941 - always reload two striper clips (10 rounds) regardless of how many rounds are in the gun.
Gewehr 43 (and variants) - never require manually chambering a round, even when reloading from completely empty.
Enfield No4 - lacking bayonet
1912 Winchester - Lacking “Trench Gun” Features, lacking m1917 bayonet
FG42 - no functioning bayonet, bayonet included in model
Ross Rifle - Lacks bayonet
Lee No. 4 - Tops up less than five rounds fine, reloads ten if you only shoot five.
Tunisia
M1917 Enfield - the m1917 bayonet is absent, should be compatible with the M1917 Enfield Rifle and M12 Winchester Trench gun (and any future american trench guns added to the game.)
1912 Winchester - Lacking “Trench Gun” Features, lacking m1917 bayonet
K98 - lacks bayonet
Armaguerra - lacks bayonet
Lee No. 4 - Tops up less than five rounds fine, reloads ten if you only shoot five.
Lee No. 3 - Tops up less than five rounds fine, reloads ten if you only shoot five.
I’m also not currently listing any bayonet issues for Berlin, since there aren’t any bayonets in that campaign currently. (Edit: generally, most guns that should have bayonets in Berlin don’t, with the excpetions of the M44, M44L, and Lebel.)

The Gewher 41 and Johnson 1941 always reload two striper clips (10 rounds) regardless of how many rounds are in the gun. I think they run on the magazine system instead of the regular system most bolt actions run on.

The Gewehr 43 and Sniper Gewehr 43 never chamber a round (cock the handle), even when completely out.

FWIW, both guns could only reload with clips (non-detachable magazines, or detachable for maintenance but not reloading)
Steyr M95 in Normandy is lacking a bayonet. Enfield No4 in Normandy lacking bayonet but isnt in Tunisia for some reason

Reload animation for loading individual rounds (bolt action) should be a bit polished, looks a bit odd only putting new rounds in it but the other already loaded rounds don’t move lower into the mag.
And all weapons with detachable magazines should’ve a round-chambered mechanic when u reload before you shot through all rounds because a round should still be in chamber than.
Yeah, you’re not wrong on either count. I’m not including wrong animations here, just lacking animations such as on the G41/Johnson, only because those are potentially a game mechanics issue.
If there’s box-mag guns with make ready animations on partial reloads, I’ll have to list them individually.
Edit: at least on the SVT-38 in moscow, it works as it should. No charging handle on a partial reload, gun locks open and has to be chambered when empty.
Edit 2: the Mannlicher 1895 in game is the cavalry carbine version, and shouldn’t have a bayonet.
The fg42 has a fold-out bayonet that’s not folded out in game. The lanchester should be able to use a bayonet, and the mp28 had an option for a bayonet mount too.
It’s not exactly fold out, it’s pull and reverse like the MAS36, but still a good one.

Ross Mk III also needs a bayonet.

Fair enough. Since I’m not arguing if guns should be in WW2 in this post (and some others on the list shouldn’t either) you’re right XD
Lee will reload 10 rounds if you fire 5, and we do have bayonets for berlin under the M44L, M44, and lebel
I’ll note the lees, should have figured they’d have a similar bug to the G41/Johnson and didn’t check.
Not gonna note M44/L, those are bayonets you can fold but not remove. The Lebel makes things a bit interesting, since that’s a removable bayonet, but since there’s a general lack of bayonets for most guns in Berlin I’m gonna let them slide for now.

I put the Berlin bayonets there since we do have them in Berlin just not enough of them

Weapons don’t seem to fire an actual bullet when using grenade launchers. If you load the M1 Carbine for example and fire a grenade you’ll still have 15 rounds in the current magazine.
I’m not sure that’s how that works, or rather, I’m pretty sure the way it works in game is almost correct for most rifle grenade launchers. With the exception of the French AFAIK, most of the rifle grenade launchers, and all of them we have in game, aren’t shoot-through, requiring a special blank type cartridge to launch grenades. Could you fire normal ammo through the launcher? Sure. Would it be a good idea to mix your grenade launcher blanks with your live ammo? Nope. Except for (I think) the Garand w/launcher, you couldn’t even use the rifle sights with a grenade cup attached, and only bolt guns with launchers would make sense for single-loading the blanks and having live rounds behind them.
