they always die after the first bullet 
You are missing the most important point:
- Enemy has to spawn plane that will fly long enough that you can engage it instead of ditching it to the ground during first fly by.
That is why I stopped doing the last two tasks and I don’t want to ruin the game for others and my nerves with it. I did that task once and since that time I always re-roll.

I meant that allies who have to do 10 melee kills find themselves figth fg42 spammers every game

Normandy any faction. If you have a fighter there since you said you’re new and played Tunisia only.
Just use an IL-2 either in Moscow or Berlin. Best “fighter” planes 
If you dont have any of them try a Bf-109 since cannons are better and MGs against planes
I got it on Normandy Dday Axis, built an AA on a bunker, but back of the roof of the bunker so nobody had field of view with me, on first base every plane just dives for kills, but they just dive in a straight line on your direction, very easy kills.
Remember if you have your engineer tool out , you can refill the AA with ammo
All my plane kills are mostly luck… I hate planes in this game but I’m a pilot so I have to use them ^^
Which planes have you unlocked 8n each campaign? That is more important than anything else along with do you have engineers unlocked that can build AA
