Are there any major differences between the two except the camo?
I can only judge by the stars and tech tree vehicles of higher ranks get 6 six stars, while gold order vehicles only get 5.
Best example would be the Panthers and Tiger on the Axis side. I got all the gold order vehicles but I’m not sure if I should stick to them or rather spend my hard earned silver to fully upgrade the tech tree variants.
No. The stars are cosmetics, a fully upgraded tech tree vehicle will be the exact same as a gold order vehicle
But some gold order tanks have either extra track armor or removed track armor, which does give some extra protection or less
So despite having only 5 stars, the Tiger E gold order is exactly the same as if I’d upgrade the tech tree one? Feels odd, but I guess my problem is solved then
Actually the ones in tech-tree are better since they are 6-star vehicles but gold order vehicles are 5-star vehicles. I have a gold order Jumbo and it’s 5 stars whereas the one I got from tech-tree can be upgraded to 6-stars and the last star I think is important since it gives
GO vehicles literally have the same upgrades as their tech tree counterparts.
You must always get the same number of upgrades.
If a vehicle has 5 stars, you would start at 2. (But GOs are already fully upgraded)
If a vehicle has 6 stars, you start at 3.
Gold order vehicles are exactly the same as the progression vehicle but comes fully upgraded, which is nice since vehicle upgrades aren’t cheap.
Currently the only way to change your aircraft’s appearance is through GO skins so there is that too.
Finally a little secret not commonly known, in rare cases some GO vehicles are little bit weaker or stronger than the progression version.
First picture is Stalingrad panzer IV F2 and the second one is GO Stalingrad “großdeutschland” panzer IV F2 skin which has tracks on front hull plate providing extra protection.

those stars mean absolutely nothing. vehicles are 99% same with exception of minor cosmetic additions/substractions that will in most cases not alter armor performance in any significant way (e.g. tracks that add extra armor, but almost everything it opposes will pen it the same with or without those tracks).
