you’re mostly going to use assaulters to clear the objective and riflemen to hold it with they’re numbers.

The main class I’d say is “underused” is AT gunners. People don’t respect the utility of AT rifles, sturmpistols, or the GrB, and I think a lot of issues people struggle with (ie tanks and flak cannons) can be dealt with by those tools if used well. Honorable mention to riflemen, because I hardly ever run into rifle grenades, which are again more useful than people give them credit.
Flametroopers people use often enough, radio operators are evident from the fact that artillery are pretty common, and snipers suffer from the fact that sniping just isn’t that helpful. They still get use by new players who don’t know better, or by vets who are using snipers because in whatever particular campaign they are playing, the best rifle is a sniper weapon.
I guess mortars are really damn rare, but I’ll be honest mortars are pretty obnoxious, so I’m content with them staying that way.
Mortar player here, have 1700 kills with mortar alone on Moscow/Axis.
One AT gunner serves on every squad, would never choose another class.
